The great part about the 21 Day Fix is the flexibility. As a married woman, it’s impossible for me to maintain a diet when I have to eat totally different meals than what I fix for my husband. He’s an athlete, so he likes to eat! This delicious honey baked cod from Cheltzey Newman of Chelzeyblf.blogspot.com was hands down his favorite meal while I was on the program. I paired it with brown rice and steamed vegetables and it was a fabulous dinner. I can’t wait to have it again!
Here’s what you’ll need:
Four cod filets
1/2 cup of honey
1/3 cup of low sodium soy sauce
1/4 cup of melted extra virgin coconut oil
1/3 cup apple cider vinegar
Two teaspoons of fresh ground pepper
Two cloves of minced garlic
Here’s how to make it:
Combine all ingredients except fish in a glass air-tight dish. Use a form or which to ensure that the honey mixes in well with the other ingredients
Add cod to the marinate, cover, and marinate for 24 hours. Flip fish once or twice to allow for even flavor distribution.
Preheat oven to 450 degrees; remove fish from marinade and place on a baking sheet prepared with parchment paper.
Bake cod for 7-9 minutes, until tender and flaky and serve immediately.
The marinade is free, so the fish counts as 1 red container. Paired with brown rice and steamed veggies, the entire delicious dinner coins as 1 red, 1 yellow, and 1 green. Enjoy!
