Healthy Eat of the Week: Simply Scratch’s Grilled Honey Mustard Chicken

I told you guys…summertime in the Jones household means time to get on the grill! We grill at least once a week and it’s usually my favorite night of the week because, even though I do all the prep work, seasoning, and marinading, my husband does the actual cooking, which means I sort of get a night off. He’s really been polishing his grilling skills and he’s gotten really good at it! This week, we tried out a recipe for Grilled Honey Mustard Chicken from Simply Scratch. I loved the way that the flavors complimented each other and that the chicken wasn’t dry at all (which is why I sometimes shy away from grilled boneless skinless chicken breasts). We had the chicken with grilled asparagus and it was easily my favorite meal of the week.

Yield: 4 servings

  1. 1/2 cup of any Whole Grain Mustard

  2. 1/2 cup of Honey

  3. Juice of 1/2 a Lemon

  4. 1 Garlic Clove, smashed and minced

  5. 1/2 teaspoon Paprika

  6. 1/2 teaspoon Kosher Salt

  7. 1/4 teaspoon Cayenne Pepper

  8. 1/4 teaspoon Red Pepper Flakes

  9. 4 Boneless Skinless Chicken Breasts

Whisk all ingredients in a small bowl.

Reserve 4 tablespoons of sauce and then pour the rest over the chicken, toss and cover with plastic wrap and let it sit for about 30-45 minutes at room temp.

Preheat the grill on medium- medium high heat, grill chicken for about 6 to 7 minutes per side or until chicken is done.

Pour the reserved 4 tablespoons of honey-mustard sauce over chicken and let rest under foil for about 5 minutes.
